Ingredients
  

  • 2-3 ripe tomatoes, diced
  • 3-4 eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • salt and pepper
  • Cooking oil (olive oil or vegetable oil)
  • Optional: soy sauce, herbs (e.g., parsley or basil)

Instructions
 

Prepare the Tomatoes:

  • Cooking oil is added to a pan that is already heated to medium heat.
  • The chopped onions should be sautéed until transparent.
  • Cook for another minute after adding the minced garlic.
  • Salt and pepper the tomatoes after adding them. Cook the tomatoes until they begin to release their juices.

Scramble the Eggs:

  • The eggs should be thoroughly beaten in a different basin.
  • If more oil is required, push the tomatoes to one side of the pan.
  • When the eggs are scrambled to the proper doneness, pour the beaten eggs into the pan.

Combine and Serve:

  • Gently combine the cooked tomatoes with the scrambled eggs.
  • Add a little soy sauce or other seasonings, if desired.
  • If available, garnish with fresh herbs.
  • Serve hot with your preferred side dishes, such as toast or rice, or as a stand-alone dish.
